Cheesy Pasta Bowl
Chashu Chicken Salad
Easy to make and prepare, this recipe has: Sliced skinless chicken breasts cooked on the stove with ingredients to season.
For the salad; Asian lettuce(if preferred can also use iceberg or butter lettuce), spinach, shredded seaweed, shredded carrot, cucumber slices, and grape tomates. And, for the
dressing; choose from Japanese Mayo, Vege Mayo, Four Cheese Dressing.
Ingredients For This Recipe
2 skinless chicken breasts sliced thinly,
2/3 cup water,
1/4 cup reduced sodium soy sauce,
2 teaspoons minced garlic,
2 teaspoons minced ginger,
1 tablespoon brown sugar or sucralose sugar blend,
1 and 1/2 teaspoon cooking Sake; can also use white wine vinegar or rice vinegar.
For the Salad:
3 leaves of Asian(Japanese) lettuce chopped,
1 cup of small spinach leaves,
dozen slices of small cucumber,
6 slices of shredded seaweed,
5 grape tomatoes,
1 tablespoon of shredded carrots to garnish,
Make Your Chashu Chicken
Put the water into a medium size pot for the stove top. Add the soy sauce, garlic, ginger, sake or vinegar, and the brown sugar. Stir with a spoon to mix all together.
Add the slices of chicken to the pot. Bring the pot to a boil, stir as it begins to boil, then reduce heat and simmer for about 10-15 minutes.
If you like, add a rounded piece of foil to the pot.
Just place the foil directly on the chicken and liquid in the pot. This will cook the chicken quicker and more evenly.

Make Your Salad Dish
Chop your Asian lettuce leaves into small pieces for your salad. Add the spinach to the dish, then add the chopped lettuce. Next, add the cucumber, and the shredded seaweed.
Finally, add your tomatoes and shredded carrot. Add your preferred dressing.
FYI - You can buy shredded seaweed at your local Asian market, and you can also use seaweed sheets (like those used to roll
sushi). These are easily available at most grocery stores that sell sushi or sushi products. Just use your kitchen scissors to cut thin slices of seaweed for the salad.
Minced bottles of garlic and ginger are available at most grocery stores usually in the fresh produce section, and Walmart sells them also.
Mayo and vege mayo available at most grocery stores. Japanese mayo is available at your local Asian market. Most grocery stores and Walmart now sell sesame oil.
Japanese Asian Lettuce - may be available at your local Asian market and some grocery stores sell it. In Halifax, I bought mine at Sobeys.
Choose Your Wine
For this dish, we have a crisp tasting salad, and seasoned chicken. For the salad, a light and crisp white wine would do nicely or a wine with a crisp note. And, for
our seasoned chasu chicken, we want a wine with some good flavours(notes) so as to match the seasoned chicken.
Since our meat is chicken we can go with a lighter type wine like
light body white wines, rose wines, and also light bodied red wines.

Chasu Chicken Salad Recipe
is a white Zinfandel wine from California. Zinfandel grapes make two types of wines, a bolder style, and a lighter
style called white Zinfandel. Zinfandel wine is mostly made in California, although a few other wine regions are now making them also.
This light bodied white Zinfandel is produced at Gallo Family Winery, and has notes of Peach, Crisp, Strawberry, making this wine a very good pairing for
our dish. White Zinfandel wines are lighter in color
than the bold Zinfandel wines, looking more like a rese wine.
