Muffin Flans
A custard like dessert with a caramelized topping. Originating in Spain this recipe has simple ingredients and many variations including fruit toppings.
Where to Buy Ingredients For This Recipe
Ingredients for this recipe can be bought at your local grocery store. You will
need:
1 can evaporated milk;
1 can sweetened condensed milk;
3 medium size eggs;
1/2 cup white sugar;
1/2 tablespoon white sugar;
1 tablespoon vanilla
You can use a whisk to mix the ingredients in a medium size glass or ceramic bowl.
Make Your Muffin Flans
First, make your caramelized sugar. To do this, put the half cup of white sugar
into a medium size non stick fry pan on the stove. It will take some time for the sugar to
melt if you leave it on a low or medium heat so what I do is turn the dial to high heat just
until I see the sugar begin to melt then quickly lower the heat setting back to medium low.
Stir the liquid continually as it melts.
This will get the sugar melting much quicker. Looking at the photos here you can see
the sugar dissolves into a liquid state then it hardens rather quickly.
As soon as it melts completely, and before it hardens, you need to put a
drizzle into the bottom of each muffin holder. This is what coats the top of your flan once
we flip the flan out of the muffin pan. Just use a tablespoon to coat each muffin holder.
Once cooked, we flip the muffin pan and the flans will have their topsite caramelized with the melted
sugar. Not only does this add to deliciousness of the flan it also looks nice. And, you
don't need to put more than 1 tablespoon per muffin holder. Once cooked, the topping has a
nice dark color compared to the lighter color of the flan itself. The sugar will also
melt down over the sides of the flan.
Once the melted sugar is added you may find they crackle a bit. This is because the sugar is hardening and
it doesn't affect the recipe.
Next, you must mix all your remaining ingredients in your mixing bowl and then
whisk them until the liquid is smooth and silky.
You can beat the eggs by themselves in a separate bowl, then add them to the mixing bowl, or just
add them first and beat them before adding the other ingredients.
Once the eggs are added and beaten, add the sweetened condensed milk, the evaporated
milk, the tablespoon of vanilla, and finally, add your half tablespoon sugar.
With this recipe I made 6 flan using a medium size
muffin pan. I poured the flan almost to the top of each muffin holder.
Bake The Flan
Pre heat the oven to 350, and bake the flan for 60-65 mins; until it is a bit jiggly but not
wavy. Use a toothpick to make sure its cooked properly. Also, to ensure it cooks evenly, you must put the muffin pan into a larger pan filled
with water. Add the water at least half the pan's height.
Once cooked let it cool for 20 mins; then run a small non edged utensil around each
flan in the muffin holders. This is necessary so that when we flip the pan they won't stick
to the sides. I use my cake icing utensil which is rounded at the bottom and made of plastic so
it won't harm my non stick pans.
Remove the Flan From The Muffin Pan
We flip the muffin pan to remove the flans. I used my wood cutting board which is the same
size as my muffin pan. I put foil on the side where I would be flipping the flan onto.
I leave the flan baking side up on the counter.
I take my wood cutting board with foil and put it
over the top of my baked flan muffin pan. I slowly flip them keeping them closely nudged.
The muffin pan is now flipped and I just leave it for a minute or so until the flan
are on the foil covered wood cutting board. Slowly lift the muffin pan from the cutting board and
the individual flans should be in tact.
Recipe Variations
You can make this recipe in a rounded pan. I made it also in two 6" small round cake pans; and
also in a one 6" rounded cake pan. Using just one 6" single pan gave a taller flan which also tasted better and
looked nicer.
You can bake the flan without the melted sugar and just leave them plain or add
your own topping like fresh fruit or syrups like caramel.
You can make the flan with less of the sweetened condensed milk then this recipe has. You can
use one half to two thirds of the sweetened condensed milk and replace that in the recipe
with additional evaporated milk. This is still sweet but not as sweet as using the
entire can of sweetened milk, and the flan is still delicious.
And for your sugar in the recipe itself, you can use a half tablespoon of sugar free Splenda instead of
sugar.
