5g fat, 1.5g saturated fat, 10g carbs, 4.1g protein, 44mg sodium, 125mg potassium, .9g cholesterol, 1g sugar, Calcium 2.68% DV, vitamin A 3.78% DV, vitamin D 10% DV, vitamin E 6% DV.
You Will Need
Pizza pan or similar large spaced surface; and large tubby for freezer with wax paper for each layer.
Ingredients:
1/4 cup unsalted butter; (I used Becel sticks, (1/2 stick) plant based unsalted butter),
2/3 cup Greek plain yogurt SKYR(I used Walnart's brand),
1 large very ripe mushy banana,
3 tablespoons Pumpkin Puree,
5 1/2 tbl Frys cocoa,
8 packets Sugar Twin or about 80g Splenda or store brand sugar free sugar,
2 1/2 tbl almond butter,
1/4 cup walnuts; finely crumbled,
3/4 cup smooth peanut butter,
2 tsp vanilla,
1/2 cup 1% milk,
1 scoop WHEY vanilla protein powder(I used Walmart brand),
3 cups plain rolled oats,
2 cups Brown Rice Krispies.
Prepare Pans
Prepare two round pizza size pans or flat low sided cookie pans; add wax paper and add wax paper to freezer storing bins or add the wax paper to pizza pans and simply lift bombs with wax paper to freezer storing bins. Either is good.
To Make:
In large saucepan; add the butter(melt on low heat), sugar, mashed banana, pumpkin, yogurt, milk, almond butter, whey powder, cocoa; at low heat stir till butter melted and ingredients blend to smooth texture. Next, add vanilla, and the finely crumbled nuts.
Remove pot from stove; and add peanut butter; mix to get smooth consistency; next, add Brown Rice Krispies; then add oats incrementally till all mixed together.
Use tablespoon to scoop a heaping tablespoon onto pizza or cookie pans. You can squish them somewhat flat or leave them with a more rounded shape; or shape them like a small protein bar.
Either way, they taste great!
Layer the bin with wax paper.
Use a spatula to lift each chewie bomb from pan to storing bin lined with the wax paper.
For
best freshness and shelf life;
Keep in freezer; just remove 10 or so minutes before you want to eat them. Also good somewhat cold. Use for dessert, snacking foods, and on the go.
