Homemade Low Sodium Stuffing
With Fresh Cranberries
This
Low Sodium Stuffing is great with hot turkey sandwiches, turkey meals, or as a side to any chicken meal. The added spices give a nice flavour without over salting our recipe. Only 1/8 teaspoon salt is used keeping our stuffing low sodium per serving since all added spices have nil or minimal sodium per portions added. The included organic chicken broth cubes are zero sodium as well.
Making and using our homemade bread recipe also allows for a low sodium version. This, together with our low salt and salt free spices and broth makes our stuffing nutritious and deliciously flavoured.
Adding a topping of
Fresh Cranberries gives a tasty contrast in flavours and adds visual appeal to the stuffing.
This 'low sodium stuffing recipe' makes 5 average servings with 150mg sodium per serving.
If you use store bought bread, your stuffing sodium per serving is more than homemade low sodium bread. So, about 300mg - 350mg sodium per serving, based on 5 servings per recipe of stuffing. Using homemade bread is a good alternative for reducing your sodium intake, and still enjoy delicious meals.
Recipe Bake Time: 20-25 mins- 350 preheated oven.
Ingredients Low Sodium Stuffing
For the homemade bread recipe,

8 cups bread crumbs,
1/4 cup unsalted butter(1/2 stick,I use Becel plant based, is fortified),
1 cup finely diced celery,
1 cup finely diced onion,
1/8 teaspoon salt,
2 teaspoons thyme,
3 teaspoons Savoury,
1/2 teaspoon pepper,
1/2 teaspoon oregano,
1/8 teaspoon roasted garlic and peppers (has tad sodium),
1/2 teaspoon garlic powder(not garlic salt),
1 cube and 1/2 cube chicken broth, no salt,(I use GoBio brand,9g per cube).
You will need: 1 loaf pan to bake the stuffing. 1 large frypan to melt butter and cook onions and celery.
How To Make
Preheat oven 375.
Prepare bread crumbs; make 8 cups, about 3/4 or so of loaf store bread, or fresh made loaf.
Make Breadcrumbs and Bake
Put on large flat broiler pan or similar and bake 10 mins to crustify.(You can also use stale bread for this). Remove from oven, let cool.
Prepare your cup of finely diced onion and celery. Boil 2 1/2 cups water; once boiling, add the cubes of no salt chicken broth and let boil until cubes dissolve, about 10 or so minutes, stir occasionally.
Add Onions, Celery, Butter to Frypan
Cut your no salt butter and put in the frypan, add onions and celery. Let cook 10 minutes medium low heat.
Prepare, measure out spices, put together in a bowl.
When butter mixture has cooked 10 minutes, add the baked bread crumbs, add the spices, mix together to combine.

Put this mixture into your loaf pan. Cover the pan with foil.
Chicken broth over the stuffing
Pour the broth mixture over the stuffing and then bake in the preheated 350 oven, 20 to 25 minutes. Let cool somewhat before serving.
Topping With Fresh Cranberries
You can also add
fresh made cranberries to the top of your stuffing, or just serve with your stuffing. Either or they taste yummy.

Make Fresh Cranberry
Considered a nutritious food, cranberries are easy to make and affordable. You can eat them with stuffing and turkey and they are a good pairing with toast and toasted bagels. Also good with peanut butter on toast.
Ingredients Fresh Cranberries
1 cup fresh cranberries,
1/2 cup water,
3 teaspoons splenda,
1 tsp no salt butter.
Bring water, sugar, butter, and cranberries to boil, let boil lightly 5 or so minutes. Stir a few times while it boils. Remove from heat let cool somewhat before tasting. If not sweet enough you can add additional sugar.
Cranberries can be added as topping on your stuffing, or served with the stuffing.
Recipe Summary
In addition to low sodium, this recipe uses nutritious ingredients like whole wheat flour for the home made bread. You can also half and half flours if you prefer adding some white all purpose flour or bread flour. Buy enriched as it has some nutrients re added to the white flour.
For butter I use plant based Becel brand as it is fortified with vitamins.
Most all spices are rich in vitamins and minerals so adding them to recipes or meals is a good way to get nutrients. I use GoBio for broth cubes; this brand uses pasture raised animals for its' ingredients and is organic. Cranberries have lots of antioxidants which are good for you.
